This is No Longer a Science Project - This is My Life!

Yesterday I went totally backwards.  Ugh!!!  First of all, people with gluten allergies who have a love for pasta SHOULD NOT GO TO AN ITALIAN restaurant.  Bad, Bad!!!  But my best friend, who passed away recently, his wife recommended to go eat at Pompilio's.  Now Tom Cruise and Dustin Hoffman went to this restaurant when they shot Rain Man in Newport, Kentucky.  It is by far my favorite Italian restaurant in the world!!!  Love the movie too! 

But, I cannot eat there any longer.  I couldn't resist, I got my favorite dish, Tortellini San Luci. Didn't eat that much of it, I ate a quarter of a dish.   Was fatigued the rest of the day!!!  I went to a video shoot, driving I could barely keep my eyes open.  Bad, I didn't even eat that much of it, before I could eat the whole plate it is so good. 

Now for the birthday party, well, of course, you go to the party and it's a gluten hell.  

Salsa with Tortilla chips, Cheese dip with soft pretzel rolls.  Sausage cheese dip with Frito's corn chips.  Crackers with cheese some meat product.  From now on I have to eat before I go to these parties, but I wanted to get my niece something extra sooooo, I didn't eat before the party.  

Then, Pizza - luckily there was a fruit salad.  Shit!  But the fruit salad had syrup on it and chances are the syrup had gluten.  

Then cake, I didn't not eat the cake.  

So, from now on, I have to eat before a party.  Because today, I gained an 1/2 inch on my belly.  I am completely bloated.  I gained 2lbs and then to top it off, I am gaseous. 

Yes, that's right I said it, I toot if I eat gluten.  I live a Tootin Free life if I don't eat the gluten!!!  

I should be embarrassed saying that but really this is a total experiment on my life and I had my theories about gas and gluten, but today I know.  

So, now I have to find a recipe for some kinda appetizer that is gluten free to bring so that I can eat at these parties too.

Losing About A Pound A Week | Fried Green Tomato Recipe

Well, it appears that I am losing about a pound a week.  Which shocks me because I am not going to lie, this week I have slacked off.  Fried Green Tomatoes are in season and I can eat about a 2 lbs of those they are so addicting!!!  But, still no gluten.  


So, I am 7 lbs till my "1st" goal and when I make that goal I am buying myself a pair of awesome looking Brazillian Pants that are around.

Gluten Free - Fried green tomatos!!! Oh baby. 


medium to large tomatoes.


-1/2 cup cornmeal  -
(I get my Carriage House which I know is gmo free.) 
--1/2 teaspoon seasalt
1/2 teaspoon of paprika 
-1 large egg
-2 tablespoons butter
-2 tablespoons canola or other mild-flavored oil
-tablespoon chopped basil and/or parsley (optional)
salt and pepper
  1. Slice, but don't peel (the skin holds them together) the tomatoes about 1/2 -3/4 inch thick. Take very thin slices from the top and bottom and discard or reserve for another use.
  2. Mix the cornmeal and salt together on a plate. In a small bowl, thoroughly beat the egg.
  3. Melt butter and oil together over medium-high heat. Dip a slice of tomato into the egg, let excess egg drip back into the bowl, and dip quickly into the cornmeal on each side and put immediately into the hot pan. Repeat until the skillet is full, but not crowded. Fry until lightly browned, turn, and fry the other side. Remove to a warmed plate and fry remaining batches.
  4. Serve warm, adding salt and papper to taste. Sprinkle with the chopped herbs, if using (if you wish, the herbs can be added to the beaten egg.).

8lbs to September 23 Weight Goal | Super Chocolate Strawberry Smoothie

Well, I made it to 163lbs.  I have 8 lbs to go.  Been remaining gluten free and keep the calories between 1200 - 1800.  I got to admit it can be very easy to keep it around 1200.  Never realized it before, but I must have been eating at least 3000 calories and I did maintain my weight, but I was overweight and border-lining diabetes and diabetes is no fun.

My clothes are rather loose on me and I am finding that I have to pull up my pants alot.  So, I am going to wait until I make my ultimate weight goal which is 145 lbs.  Now my doctor's advises not to go pass 155.  He said that would actually be too skinny for me.  So, I've been thinking about these unrealistic goals "They" put on us and I don't think it applies to everyone.  I think "They" are not including bone structure.  Even when I was wearing Zeros - I was still big-boned.  Once I am 145 and yes, against my doctors wish I am shoot for 145lbs, I am going to keep the calories around 1800 - 2000 a day.  Which I don't think will be a problem but some days I am sure I will lapse. I wouldn't be normal if I didn't.


Anyways, today I made the best Chocolate Strawberry Smoothie.  

I used Mayan Cacao bits which is a superfood!  It's an antioxidant and high in magnesium (Americans lack this vitamin).

 

Here is the recipe: 
1.5 cups of Cold Filtered Water
1 tablespoon of Nutiva Hemp Nuts
4 Medjool Dates
2 Tablespoons of Cacoa.  
2 ripe bananas.

Now in my vitamixer - Hi put this on high speed for a few minutes because the bits and dates are hard to smooth out.  Then after that I added. 

1 cup of frozen strawberries
1 tablespoon of "Local" honey. 
1/2 cup of Greek God Honey Yogurt.  

Mix till smooth!  

Super healthy - super tasty.  My son, drank it up. 







   

Birthday Party Aftermath

Well, yesterday I gained 2lbs from the birthday party and I had blue cheese, I forgot blue cheese has wheat gluten as it is made from wheat.  So, today I am back to 164 lbs.  Whew!!!  Was really really worried there.

Anyways, I made a really good tomato soup.


Ingredients

  • 4 cups chopped fresh tomatoes
  • 1 slice onion
  • 4 whole cloves
  • 1/4 cup of fresh basil
  • 1 tablespoon or oregano
  • 2 cups chicken broth
  • 2 tablespoons butter
  • 2 tablespoons gluten-free flour
  • 1 teaspoon salt
  • 2 teaspoons white sugar, or to taste
  • 1 tablespoon of butter

Directions

  1. In a stockpot, over medium heat, combine the tomatoes, onion, cloves, basil, basil and chicken broth. Bring to a boil, and gently boil for about 20 minutes to blend all of the flavors. Remove from heat and run the mixture through a food mill into a large bowl, or pan. Discard any stuff left over in the food mill.
  2. In the now empty stockpot, melt the butter over medium heat. Stir in the flour to make a roux, cooking until the roux is a medium brown. Gradually whisk in a bit of the tomato mixture, so that no lumps form, then stir in the rest. Season with sugar and salt, and adjust to taste.

165 and 15 lbs to Go


Well, I am finding that if I keep the calories at 1200 - 1400 a day, I will lose a pound a day.  Now, I am a really active person, so I know that counts.  And now that I am gluten-free my activity amplifies!  

I am noticing the weight lost in some of my clothes.  I never kept any of my old clothes; at least I don't think I have. I should go check.  Anyways, I can live like this, but we'll see because this weekend is my husband and my brother-in-laws birthday, so what does that mean? 

Well, my mother-in-law, although she is one of the sweetest ladies in the world, she can get quite offended if we don't eat what she serves.  I can't blame her because I get offended too.  "What?!?!?  My food is not good enough?"    She most likely does not understand the allergies and what who.  Luckily for me, I don't have a severe reaction besides a severe case of chronic fatigue syndrome.  However it is going to be interesting to see how my weight reacts.

So, this is my plan...  This week keep the calories to 1200 - 1400 every day this week.  Then when Sunday comes, the ultimate experiment will be on.  Will I be chronic fatigued?  Tune in next week! 

LOL, anyways, here is my tasty recipe for the week. 

2 slices of Udi's Whole Grain Gluten-Free bread. (Toasted)   (150 Calories)
1 tablespoon of cream cheese.   (50 Calories) 
3 to 4 slices of cucumber.   (3 Calories)
Couple dashes of salt.     (0 Calories) 

Next time, I might add some dill.  



Now, my hubby has quite the refined palate and he really enjoys Udi's breads!  


BTW, you can see what I am eating here.  You'll notice 1 timed I cheated. LOL!  But, I didn't gain, which was interesting.  Some days I am eating at 2400 calories, some days 1300.
